| | My daily breakfast is oatmeal. Whether it's cold outside or a warm sunny morning, I prepare oatmeal. Sometimes I top it with sliced bananas and a little brown sugar. Other times I eat it with blueberries, or applesauce, or perhaps a spoonful of raspberry preserves, or even a drizzle of maple syrup. On some weekends, though, I can be tempted to eat something different. Here are some of my favorites. | | Low Fat Waffles One of my favorite Christmas presents this year was a Belgian waffle maker. So much to my kids' delight, I've been making waffles every weekend. Now waffles are not the most healthful of breakfast foods, but with a little tweaking, it's possible to make delicious low fat waffles. Top them with some fresh fruit and a dollop of low fat vanilla yogurt. | Whole Wheat Pancakes Why settle for store-bought pancake mixes when you can so easily make your own, more wholesome pancakes? These whole-wheat pancakes are light and delicious. Add some chopped berries if you like, and serve with warmed fruit compote or maple syrup. | Morning Glory Muffins Filled with shredded carrot, crushed pineapple and raisins, these make a great breakfast muffin to be enjoyed with a banana and a glass of ice-cold nonfat milk, or warm cocoa. If you're one of those who doesn't have time for breakfast, then pack one to take to work. For an extra nutritional boost, replace half the flour with whole wheat flour. | Mexican Breakfast Wraps Perfect for breakfast or lunch, enjoy this burrito-style huevos rancheros, or Mexican eggs in a wrap. It might not be authentic, but it adds a little spice to your morning.
