Once in awhile, I hit a real breakthrough. Why would I boil almond meal? Well, something I chanced to hear on Iron Chef America in "Battle Almond" got me started on a series of experiments. In this case I started with more ingredients, like butter and cream, but then I realized that all you really need is almond meal (flour), salt, and water. Add some Parmesan cheese, and you've got a decent substitute for the Italian classic. From there, the possible variations are endless! Please try it and let me know what you think! Laura

Low-Carb "Polenta" or "Grits"
From this basic recipe, you can thin it out to be more like grits, thin it more to make a sauce, add more flavor with bacon, make it sweet with fruit, or anything your imagination can up with! I like it served with greens and mushrooms.

Cauliflower "Rice"
Here's another "fake starch". You'll be surprised at how easy it is to make "rice" from cauliflower to accompany many main dishes, from a curry to seafood in a sauce.

Speaking of cauliflower, it's also a great substitute for potatoes!
