The beauty of beans is that they're low in fat, high in fiber, and a cheap source of protein. True, canned varieties can be high in sodium, but you can usually find reduced-sodium cans, or you can cook your own beans from scratch. Enjoy a vegetarian meal using beans, or use beans to complement ingredients such as chicken to add extra heartiness to a dish.

Cheap and Easy Rice and Beans
If you keep your pantry well stocked, you're bound to have most of the ingredients called for in this easy rice and beans recipe. And if you don't, it's easy to switch a few ingredients here and there. What I like about this meal is that it's healthy, low fat and low cost. What more could you want?

Chicken, Kale and White Bean Stew
Comfort food needn't be heavy and unhealthy. It can be filling and nutritious like this chicken, kale and white bean stew. I love the earthiness of kale, which adds its own flavor to this stew. Plus, it makes a nice change from spinach, which tends to be my default green.

Lentil and Black Bean Soup
Here's a delicious, nutritious, and satisfying soup, which is packed full of low-fat, high-fiber goodness. If you choose to use vegetable broth, this makes a great vegetarian lunch.

Sausage, White Bean and Tomato Sauce
Chicken sausages are a great low-fat alternative to regular sausages, and there are some excellent lean varieties available. No less hearty than regular sausages, Italian chicken sausages form the base for this delicious sausage, white bean and tomato sauce.
