Although I think it's best not to have a steady diet of sweet stuff, we all deserve a little something special once in awhile. When going to dinner at a friend's home, I find I'm often asked to bring the dessert. I guess over the years I've developed a reputation for making good desserts which are also sugar-free and gluten-free. It works out well for me, too, as I get to share in the treat! These raspberry jello squares made with cream cheese are easy to make and are a nice sugar-free, low-carb dessert.

Lemon is one of the most popular cheesecake varieties. I think it's because the acid of the lemon cuts through some of the richness of the cream cheese. The key is to get "the right amount" of lemony flavor without it being sour.
