Today is Cinco de Mayo, a great excuse for a fiesta, or at least for some Mexican-style fare (which, for my kids, means chicken quesadillas). Then, of course, this Sunday it's Mother's Day in the U.S., where children big and small treat their moms to something special. And what could be more special than a home-cooked meal?

Fiesta-Style Scallops
These almost blackened scallops are zesty and delicious, making them a perfect dish for a Cinco de Mayo celebration.

I don't need an excuse to dip into some taste-bud-tingling salsa, but if you need one, Cinco de Mayo is here!
