Collards and other greens are a great Southern side dish.

Easy Shrimp Scampi
A great thing about seafood is how quickly it cooks. You can easily throw this dish together in 10 minutes.

Cauliflower "Rice"
Put shrimp scampi over cauliflower "rice" and you have a complete meal. If you haven't tried this yet, please do it! It is easy and my vegetable-hater husband likes it. There's also a video demonstrating how.
