Despite its wealth of vitamins and minerals, beef has long been demonized by the low-fat camp because of its high cholesterol and saturated fat content, but should you avoid it altogether? It may be that in modest quantities, steak and hamburgers may not be so bad for hearts after all. What's the story?

Is Fat Back?
To eat low carb or to eat low fat? That is the question. Unfortunately, there's no clear right or wrong answer. Conventional wisdom continually shifts. The more we think we know about nutrients, the less we seem to understand.

How to Make Lower Fat Burgers
Well, if the latest analysis by the Harvard School of Public Health is right, and a modest amount of unprocessed red meat isn't going to increase your risk of heart disease, then put a burger or steak on the grill. Just don't top it with bacon, and for goodness sake don't grill any hot dogs! Small portions of these processed red meats increase your risk of heart disease by 42 percent and diabetes by 19 percent.

Southwestern Burgers
This is one of my favorite burger recipes. These tasty, low fat burgers use extra-lean ground beef combined with mashed black beans to reduce fat content and make moist, flavorful patties. The jalapeno pepper, cumin and cilantro add a nice little kick.
