How to Cook and Eat Asparagus
Asparagus has a relatively short season, and to enjoy it at its best, it's worth waiting for it to be in season. Not sure how to prep and cook it? I'll explain how.

Asparagus Frittata
This low fat asparagus frittata is a lovely spring time dish. Use either egg substitute or a combination of whole eggs and egg whites. Serve with some fresh fruit and a low fat muffin on the side.

Poached Eggs with Asparagus
This dish of poached eggs with asparagus makes a delightful spring brunch or lunch. Find the freshest eggs and some fresh farmers' market asparagus.

Halibut, Asparagus and Rosemary
This colorful, fragrant halibut, asparagus, tomato and rosemary dish is perfect for a spring time supper. Serve with some whole grain rice, couscous, or my new favorite, quinoa.
