Low-Carb Fourth of July
Between the potato salad, the hamburger buns, and the strawberry shortcake, you might think July 4th needs to be a carb fest, but there are lots of great traditional choices that are low in carbs, and others that can easily be made so. Here are some ideas to have a wonderful celebration without sending your blood sugar through the roof.

Caulflower
This is a really great substitute for potato salad - I've actually gotten requests to bring this to summer potlucks.

Low-Carb Strawberry Shortcake
I don't think any dessert says "Fourth of July" louder than strawberry shortcake. Yum!

Watermelon Salad with Cucumber and Mint
This salad is refreshing, delicious - and EASY! It's a surprisingly great combination of flavors.
