Summer is a time when we should be able to eat low fat with ease, but there are challenges. While there's an abundance of fresh fruit and berries, salad greens and tomatoes, there are also big juicy steaks, burgers, hot dogs, potato salad and other high-fat fare to tempt us.

A Low Fat Summer
With an abundance of fruit, from super-sweet berries to succulent watermelon, and a variety of veggies to use in all kinds of salads, there's really no excuse not to eat healthy.

Southwestern Burgers
These tasty, low fat burgers use extra-lean ground beef combined with mashed black beans to reduce fat content and make moist, flavorful patties. The jalapeno pepper, cumin and cilantro add a nice little kick. Use a hotter chile pepper if you prefer, or omit it altogether if you want a more subtle flavor.

Blueberry Coffee Cake
Coffee cakes are notoriously rich and delicious, especially with their buttery-streusel toppings. This low fat blueberry coffee cake is a fruit-filled delight, with a much lighter yet still-flavorful topping.

Poached Chicken
Rotisserie chicken is great, although it's often high in sodium. If you want chicken to make salads or sandwich fillings, try poaching it. This shouldn't be confused with boiling chicken, which would produce a bland rubbery meat.
